Job Title : Line Cook / Sushi
Restaurant hours: Monday – Thursday 11am-10pm / Friday & Saturday 11am-1am / Sunday 3pm-10pm
Job Responsibilities:
✓ Clean and sanitize the kitchen and utensils before and after service.
✓ Complete all closing and opening checklists
✓ Ensure all equipment, utensils, plates etc, are kept clean and organized throughout service
✓ Implement and adhere to the FIFO (First In First Out) method to ensure proper food rotation.
✓ Make sure meats, vegetables and fruits are separated to avoid cross contamination.
✓ Make sure all storage areas whether cold or dry are neat and organized at all times.
✓ Work as a team to ensure food quality, consistency and prep time.
✓ Make certain you have the required stock to assure a smooth service period. Promptly notify the Head / Sous Chef of any shortages or outages of stock.
✓ Have a comprehensive knowledge of the food/dessert menu
✓ Follow recipe instructions EXACTLY as they are stated - ensure the quality, portion size, cooking and baking time and consistency of every item that leaves your station.
✓ Be available to perform prep work during slow periods. Check in with the Head / Sous Chef for a prep work assignment during slow periods.
✓ Ensure that all equipment used is operating correctly and at the proper temperature. Report any broken/malfunctioning equipment to the Head / Sous Chef
✓ ALWAYS follow safe food handling practices according to HACCP regulations.
✓ Know and follow proper plate presentation and garnish set up for all dishes.
✓ Attend all scheduled employee meetings and brings suggestions for improvement
✓ Use product labeling system to label, date, rotate and store all food products.
✓ Make sure you are properly presented, with uniform and adhering to company’s grooming standards.
✓ Always have a positive demeanor, and be interactive when dealing with guests
✓ Ensure your workstation is kept clean and tidy
✓ Be attentive to guest’s needs and special requirements especially with regard to allergies
✓ Performs other related duties as assigned by the Head / Sous Chef or manager-on-duty.
✓ Any other duties that may be assigned.
Requirements:
✓ Valid Food Badge
✓ Copy of ID (to be attached to application)
✓ Excellent Customer Service Skills
✓ Must have experience working in a kitchen
